Cheesy Broccoli Hashbrowns
CHEESY BROCCOLI HASH BROWNS
-Stick of Butter
-1/2 Package Cheesy Garden Broccoli Soup Mix (divided)
-Bag of Southern Style Hash Browns
*Melt stick of butter in medium sized bowl and mix with 1/4 package of Cheesy Garden Broccoli Soup Mix. Add entire bag of hash browns. Mix in remaining 1/4 package of soup mix. Generously coat cookie sheet with spray butter and evenly spread mixture on pan. Top with additional spray butter. (optional) Bake @375 for 30 minutes.

Ginger Strawberry Sorbet

Did you know that ginger helps improve the absorption of essential nutrients in the body, it also helps with tummy cramps and digestive problems.
Here is a quick and easy delightful "Ginger Strawberry Sorbet" recipe.
Ingredients -
2 ripe bananas - frozen
1 cup strawberries - frozen
1 tsp grated ginger - you can purchase ginger at any grocery store and grate it with a miroplane or fine grater, not the same one that you use for regular cheese.
Add ingredients to a blender and blend on high until smooth. Enjoy!

Fun Pancakes
What a great alternative to a traditional pancake, especially for those that need a gluten free option or are cutting out carbs for the summer season!
To make a single serving pancake you will need:
•1 large egg and 1 egg white
•1/4 cup of warmed milk
•1/4 cup of flour (plain will do, I used 00, or you can use GF)
•1 pinch of salt
•2 teaspoons of honey
•1 dash of vanilla extract
•1 tablespoon of butter
•Soft fruits
•Honey
How to make them:
1.Heat the oven to 200°C (which I gather is around 392°F)
2.Heat a small 6″ oven proof frying pan
3.In one bowl whisk one egg white until it is white and peaky
4.To make the main batter, in another bowl, mix the the other whole egg with flour, salt, honey, and vanilla then whisk in the warm milk
5.Gently fold the egg white into the batter with a metal spoon
6.Melt one tablespoon of butter in the hot pan
7.Pour the batter in and cook on the hob (stove top) for a few minutes until starting to set at the very edge
8.Sprinkle some fruit on top
9.Bake the whole lot in the hot oven for 7 minutes until puffed up and golden
10.Drizzle with honey

Kickin' CheeseBurger Dip
1 Cheesy Beer Dip
1 Southwestern Dip
1 lb. Ground Beef
8 oz Cream Cheese
8 oz Sour Cream
1 Can Rotel (tomatoes & green chiles)
Microwave ground beef in medium glass bowl stirring every 2 minutes. Cook until beef is no longer pink. (about 5 minutes) Drain Beef and return to glass bowl. Add undrained can of Rotel, Southwestern dip, and sour cream and mix well. Place cream cheese on top and return to microwave. Cook for 3 minutes, stirring every minute until cream cheese is completely melted. Add Cheesy Beer Dip and mix. Serve with Tortilla Chips.

Make Your Own Cheddar Bay Biscuits
Ingredients:
Ultimate Biscuit Mix
1/2 cup shredded cheddar cheese
1/2 cup butter or margarine, melted
1/4 teaspoon garlic powder
Directions:
Preheat oven to 450 degrees F.
Mix Ultimate Biscuit Mix and cheddar cheese until soft dough forms.
Drop by spoonsful onto an ungreased cooking sheet.
Bake for 8 to 10 minutes until golden brown.
Mix butter and garlic powder. Brush mixture over warm biscuits before removing from cookie sheet.
*Down here in my neck of the woods we add a dash of old bay to the butter and garlic powder

Mexican Skillet Dinner
Ingredients:
2 Rajun Cajun Jambalaya
1 lb hamburger
1 lb ground sausage
6 c water
1 can diced tomatoes, drained
1 can sweet corn, drained
Optional: shredded cheese, sour cream, salsa, your fave toppings
Directions:
Cook hamburger and ground sausage, add water, Jambalaya mixes, tomatoes and corn. Bring to boil and let simmer 20-30 minutes until rice is tender and juice cooks down.
Top with your favorite toppings and enjoy.
